Fields of Study at FRS
At Francis Restaurant School (FRS), we offer professional vocational training programs in the restaurant and hotel industry. Our curriculum is designed based on Germany’s dual training (DUAL) model, combining theoretical learning with hands-on practice, enabling students to master knowledge and practical skills directly in the workplace. The programs at FRS equip students not only with professional skills but also help them build confidence and prepare thoroughly for their future careers.
Professional Chef
The Professional Chef Program at FRS provides in-depth knowledge and skills ranging from basic to advanced levels in the culinary arts. Students will learn to select ingredients, prepare dishes from various cuisines such as European, Asian, and Vietnamese, and master techniques in food presentation and kitchen management in restaurant settings. Upon graduation, students can work in upscale restaurants and hotels or open their own establishments.
Restaurant and Hotel Management
The Restaurant and Hotel Management course equips students with essential management skills in the restaurant, hotel, and food service industries. Students will receive training in human resource management, finance, marketing, and service quality management. The program aims to develop students' leadership mindset and operational abilities to manage restaurants, hotels, or premium service establishments effectively.
Beverage Preparation
The Beverage Mixology Course at FRS offers students the opportunity to learn and practice the art of crafting coffee, cocktails, mocktails, and other creative drinks. Students will master modern mixology techniques, flavor pairing, and service skills within a professional restaurant and hotel environment. This program is ideal for those looking to work in bars, restaurants, or international hotels.
Pastry Chef
The Baking Techniques course offers students the opportunity to learn the art of baking from basic to professional levels. Here, students will learn how to make various pastries, bread, and specialty cakes from different countries while practicing intricate cake decorating techniques. Upon graduation, students can work in bakeries, restaurants, or start their own bakery business.
